Here’s a quick and healthy treat that can replace the traditional Christmas cookie.

Holiday Lemon Cookies
1 1/2 cup almond flour
1/3 cup coconut flour
1/2 teaspoon Himalayan salt
2 teaspoons vanilla extract
the juice of 2 -3 fresh lemons (depending on size)
1/4 cup coconut oil (melted)
1/4 cup agave or sweeten to taste
Place all the ingredients into a food processor. Mix well.
Roll spoon sized pieces of dough into ball shape.
Then roll them in shredded coconut.
Chill for 15 minutes before serving.
Store in refrigerator.
